
What is White Morph?
Pure white in a landscape of greens and blues, the White Morph is a Tasmanian bird of prey regularly seen flying over our area. This magnificent Goshawk, while relatively small, is wild, unexpected by its prey and fiercely unique. Just like us.
We’re a family owned Meadery in Kettering, south of Hobart, making new, distinct and delicious meads with pure Tasmanian water and honey. We love experimenting with other locally sourced ingredients, building on the foundation of water and honey, to create more unexpected Tasmanian treasures.
Committed to carefully crafting and testing what we make, our aim is to create consistently fresh and delicious products that stand out.
What is Mead?
Mead is made by mixing honey with water and then adding yeast, which turn the sugars into alcohol. Traditionally this has often resulted in a sweet, wine-like drink. Our meads are a little different. Dry hopped, bubbling or sour; they are a world away from sweet wine!
Our meads are lower in alcohol and are carbonated like beer and cider. We want to make mead that showcases the wonderful, pure Tasmanian honey we have access to while creatively combining different ingredients to make something delicious.
Mead is great fun to make - the possibilities are almost infinite! You can choose from many different honey varieties and yeast strains. You can introduce hops, fruits, herbs or spices. Even a small change can result in a very different mead.

Who Are We?
Hi there, my name is Jeshua Brouwer, one of the founders of White Morph Mead.
As a long-standing brewer and experimental fruit wine maker, I discovered mead making after giving it a go with honey from my own hive.
The journey from there to White Morph Mead has been lots of fun, and I'm happy to say our mead keeps getting better with every batch!
White Morph Mead is all about making low impact, great tasting craft meads using modern techniques while celebrating and showcasing Tassie's unique ingredients.
Hi, I'm Simon, co-founder (with Jesh) of White Morph Mead.
I’ve been interested in fermenting different alcohols and foods for about 20 years; think beer, sourdough, yoghurt and cheese. But it was Jesh who suggested I should try making mead. We started developing recipes together, fermenting test batches, trying different honeys, sourcing fruit and having lots of fun doing it.
I learned a lot from our many early failures and successes. I find it endlessly interesting and great fun to create drinks that are genuinely unlike anything else! Our growing enthusiasm and confidence led us to start White Morph Mead, where we're dedicated to crafting pure, distinctive, and unexpected meads. It’s exciting, and a little nerve wracking, to have the opportunity now to share it with you all.
Our vision is for craft mead to be, once again, as well known and loved as wine and beer are today. It’s a drink with ancient roots that, we believe, has a bright future.
